Everyday Healthy Truffles

These everyday healthy truffles are a sweet treat without the guilt. While I make some pretty awesome vegan truffles, they’re a little bit of a mess to put together and certainly not something you’d want to eat everyday.

However, these little guys are full of healthy ingredients and they’re super easy to make. If you can toss stuff into a food processor, then you’ve got a delicious and healthy snack/dessert! You don’t even need a knife or a chopping board. Now that’s what I’m talkin’ about!

Everyday Healthy Truffles - Vegan and Gluten-Free

It’s not everyday that you come across a recipe that will become a staple for your household and lifestyle. For me, it has to:

  1. Contain simple ingredients that I normally have on hand
  2. Be easy to prepare
  3. Taste great while being healthy enough to eat each day

This recipe was adapted from Clean Eating Chelsey’sΒ chocolate covered dough balls (which I found via Living Lindsay’s awesome blog). (Update: Feb 22, 2020 — Unfortunately both sites are no longer available.)

Notes — Everyday Healthy Truffles

  • The first time I made these, I made them plain, without any chocolate and they were so good that they didn’t last long enough for a photo shoot. However, this week, I decided to make them again and dipped/drizzled two-thirds of them with chocolate, and all I can say is: WOW. They’re so decadent with the chocolate – but truly and honestly, they’re great either way so feel free to make both versions.
  • I even made a couple of these without baking them (and without the chocolate). I just formed the balls and put them into the fridge to harden, and they were equally great. They were possibly a bit mushier, so probably not as good if you plan on transporting them, but great if you just plan on eating them out of the fridge… as I did… repeatedly. I’ve included both options in the recipe, below.

Everyday Healthy Truffles

These healthy truffles are a sweet treat without the guilt. Let them set in the fridge, or bake them to make them easy to transport. And you can optionally dip or drizzle them in chocolate to make them even more decadent. They’re vegan and naturally gluten-free!

Ingredients

Scale
  • 3/4 cup raw almonds
  • 1/2 cup raw pecans or walnuts
  • 1 cup shredded coconut, unsweetened
  • 6 dates, pitted
  • 3 tbsp liquid sweetener (maple syrup, agave nectar, brown rice syrup, date syrup)
  • 3 tbsp apple sauce, unsweetened
  • 2 tsp vanilla
  • 1 cup vegan semi-sweet chocolate chips (optional)

Instructions

  1. Grind nuts in a food processor until fine like flour. Add coconut and dates and pulse until smooth.
  2. Add other ingredients (except the chocolate) and pulse until a large ball of dough forms. Use your hands to form about 35 dough balls.
  3. If you plan on eating these at home, just place them in the fridge for about an hour to harden. Otherwise if you’d like them to transport well, place them on a greased cookie sheet and bake them at 350Β°F / 175Β°C for 8 minutes.
  4. If you’d like to coat these in chocolate, melt 1 cup semi sweet vegan chocolate chips in the microwave. Microwave for 30 seconds, stir, then continue that process until chocolate has melted (it will take about 2 minutes). Alternatively, melt the chocolate over a double boiler on the stove. Dip or drizzle each ball in the chocolate, place on wax paper, and put in the freezer to set (about 30 minutes).

  1. I make these for a quick snack before the gym and they are perfect. They also freeze well, so I just take out what I need for the day. Thanks for another great recipe.

  2. When the consistancy is too dry, maybe you can put al little amandelflour through it.
    Sorry my Englisch is not so very well, i came from the netherlands. For sweeteners you can use a little bit of stevia or coconutpalmsugar.

  3. I’ve made these twice and while they are delicious I can’t seem to get the consistancy right. I followed the recipe exactly but when I add the sweeteners I never get that big dough ball that is supposed to form, just a lot of sticky mush. I plop that onto a baking pan and bake and they are still very sticky and mushy. But still delicious…just not good for travel.

    • Yes! I made a few without baking – just right into the fridge to set and they were great! No chocolate on those, but maybe you could add raw cacao powder right into the balls themselves…
