Trip Home Update

Hi everyone! I’ve been super busy with work and family functions in Canada but wanted to take a quick moment to share a couple photos of some of the delicious food that I’ve eaten. The weather in Ontario, Canada has been simply gorgeous – everyone is in a great mood and it’s just the perfect time to be here. I’m so lucky!

I flew into Toronto late Tuesday night and spent Wednesday-Friday at work with my colleagues. It was so great to see and catch-up with everyone. On Friday, my fiance Matty flew in from Sydney and we headed to his dad and step-mom’s place in Burlington. His step-mom is a registered nutritionist and she made me an amazing vegan pizza – complete with vegan peperoni and Daiya cheese. It was amazing!

While there, I had a super healthy breakfast everyday: a huge bowl of fresh fruit, a vegan muffin, and soy yogurt with fresh blueberries and sprinkle of cinnamon. Delicious!

On Tuesday, Matty and I headed to Waterloo to stay with his mom & step-dad, and to Elmira to visit with his Nan. Unfortunately, I don’t have any photos of our meals there, but we got together for sushi that night with his mom, step-dad, step-brother and wife before a fun evening of bowling. On Wednesday evening, I got to go out with Matty’s mom and Nan for a girl’s night out and we enjoyed yummy Asian food and delicious Sangria. We had such a great time together!

I arrived in Ottawa earlier today and as I was eating lunch (another vegan pizza – I’m spoiled!), my mom and I were discussing all the food that we hope to make together. We made an awesome salad tonight that I hope to share with you in the coming days. I hope everyone is having a great week (no matter where you are) – stay tuned for more updates from me and some great recipes from my mama’s kitchen!

    You are going to live to be 200….i wish I could eat as healthy as you! Truly an inspiration and great role model for our ever increasingly obese society we live in……..Thanks for posting this.

  3. Aww, how sweet of them! I always feel so loved when I go home and my family has gone out of their way to buy me soy burgers, loads of fresh fruit and all the other goodies I know they sure as heck didn’t pick out for themselves!

  4. Ahhhh I’m hungry. Canada is very well known for its vegan friendly eateries! Glad you came all the way from Sydney for that, but I really love the vegan stuff there, too, especially that awesome vegan tropical-flavoured tapioca pudding you find in nicer groceries! I miss it…..

    I am new at trying out interesting recipes that are cooked vegan. And you have a very easy way of making me understand…how to cook vegan and enjoying a meal’s with color, taste, and is good for you. Very nice website, favorite is a must. Thank you, from a baby boomer.
