Avocado & Spinach Salad with Pine Nuts

- 1 bag baby spinach, washed and dried
- 1 avocado, sliced
- ¼ cup pine nuts, toasted
- 3 tbsp olive oil
- 1 tbsp fresh lemon juice
- salt & pepper
- If pine nuts aren’t toasted, heat them gently in a frying pan but watch them carefully as they can burn quickly.
- Whisk together olive oil, lemon juice, salt and pepper.
- Toss everything into a bowl and enjoy.
