Vegan Fajitas

Vegan FajitasOne of my favorite types of food is Mexican food. Maybe it’s the fact that beans+rice make such a great nutritional combination, or that putting guacamole on everything is perfectly acceptable. That’s probably the real reason!

Fajitas are so easy because you don’t really need a recipe to make them. I start by lightly-frying some strips of tofu or slices of Portobello mushrooms, which add some nice density to the fajitas. From there, I add strips of bell peppers (capsicum), broccoli, carrots, loose or refried beans and a little bit of mexican rice or quinoa. I don’t have a recipe, as I just stir-fry the everything in a bit of lemon juice, cumin, and chili. I top everything off with guacamole, fresh salsa, cilantro (coriander), and the occasional dollop of vegan sour cream. Heaven! (And so much cheaper to make at home than the exorbitant prices that restaurants charge!) Oh, and if I don’t have any tortillas, I just toss everything into a bowl. “Mexican bowls” are even easier but just as delicious!
